I want to share with you a delicious raw vegan tomato stack. If you are wanting to incorporate more vegetables into your diet this is a great way to do it. Below I have included the step by step instructions for making your own. Get creative and add whatever your like into yours.

Tomato Stack

Yield: 2-3 stacks

1 large slicing tomato

asparagus, basil, sprouts or spinach

almond feta cheese

3 teaspoons balsamic vinegar

3 teaspoons olive oil

Using a stacking tool begin with the tomato layer, feta cheese, basil and a drizzle 1 teaspoon vinegar and 1 teaspoon olive oil.  Continue layering until reaching the top of the stack.  Slice and enjoy.
